3 Coconut Recipes You’d Love

Many people refer to coconut as the wonder fruit. I couldn’t agree more because coconut has several uses and health benefits, it would be quite impossible to mention all. Apart from the fact that the coconut meat is delicious on its own, many coconut dishes, desserts, smoothies, snacks etc have given our taste buds immense pleasure over the years.

I believe the several health benefits that coconut has to offer makes it a choice/favourite ingredient in our dishes. One cup of coconut contains about 46 calories. Also, the fruit has several nutrients like fibre, carbohydrate, sodium, calcium, Vitamin C, potassium etc. Coconut water has antioxidant properties that protect the body from free radicals. Diabetics can also benefit from coconut water because it is a good source of magnesium and helps to decrease blood sugar levels.

Below are some of the mouth watering recipes you can make with coconuts;

1. Coconut Pineapple Smoothie:

2 tablespoon of grated coconut

⦁ 1/4 cup of plain yogurt

⦁ 1 handful of ice

⦁ 1 cup of pineapple chunks

⦁ 1/4 cup of coconut milk


Put the ice, pineapple, yogurt, coconut milk and grated coconut in a blender.

⦁ Blend until smooth and pour into glass.

2. Coconut candy:

⦁ 1 large coconut

⦁ Coconut water

⦁ 200g icing sugar

⦁ Water


⦁ Break the coconut; make sure you collect the water.

⦁ Grate the coconut meat into medium sized flakes.

⦁ Pour the coconut water into a frying pan, add the icing sugar, grated coconut and stir.

⦁ Add little water to the mix, cover the pan and let it boil on high heat for five minutes.

⦁ Reduce the heat and start stiring the coconut. By now, it should start browning and sticking together.

⦁ Continue to stir till all the water has evaporated. 

⦁ Turn off the heat and leave to cool.

⦁ Serve.

3. Coconut rice:

⦁ 2 cups of rice

⦁ 1 medium sized coconut

⦁ 1 cup of chicken/beef stock

⦁ 1 seasoning cube

⦁ 1 cooking spoon of coconut oil

Salt to taste

⦁ 1 medium sized onion (diced) 

⦁ 2 table spoon grounded pepper


⦁ Grate the coconut and blend with 2 cups of water. Sieve and set the extract aside.

⦁ Parboil the rice for about 7 minutes, wash and set aside.

⦁ Pour the chicken/beef stock, coconut extract, seasoning cube, onion, pepper and coconut oil in a pot and let them simmer for 5 minutes.

 ⦁ Add the rice, stir and add very little water (if necessary)- just enough quantity to cook the rice.

⦁ Cover the pot and let the rice cook. 

⦁ Stir and add salt to taste.

⦁ Serve with meat/chicken/shrimp etc.
